Toby Amidor, MS, RD, CDN, FAND, is the founder of Toby Amidor Nutrition and an award-winning registered dietitian, Wall Street Journal bestselling cookbook author, and nationally recognized nutrition expert. She has served as the nutrition expert for FoodNetwork.com for nearly 20 years, writes the long-running "Ask the Expert" column for Today's Dietitian Magazine, and is a frequent media contributor. Toby is an adjunct professor at Quinnipiac University and has received the Academy of Nutrition and Dietetics' Media Excellence Award and the New York State Academy's Outstanding Achievement in Public Relations and Communications Award.

Tom Brenna, PhD, is Professor of Pediatrics, Chemistry, and Human Nutrition at the University of Texas at Austin and Professor Emeritus at Cornell University. An internationally recognized expert in fatty acid research and human nutrition, his work has significantly advanced the understanding of dietary fats and their role in health. Dr. Brenna has served as an advisor and member of multiple Dietary Guidelines Advisory Committees and most recently advised the U.S. Department of Health and Human Services on saturated fat for the 2025 Dietary Guidelines for Americans. In 2026, he was named a Distinguished Fellow of the American Society for Nutrition.
