Webinar: What’s Hot in Fat Science: Evolution and Emerging Insights

November 17, 2026

As new evidence reshapes our understanding of dietary fats, nutrition professionals are challenged to navigate an increasingly complex landscape, where “good vs. bad” fails to tell the full story. With the release of the 2025-2030 Dietary Guidelines for Americans, there is a renewed focus on the health impact of different fatty acids and the food matrix containing those fatty acids.

Join Martha Belury, PhD, RD; Kevin Maki, PhD, CLS, MNLA, FTOS, FAHA; and Carolyn Williams, PhD, RDN, on Tuesday, November 17, from 1-2 p.m. ET, for a webinar that will unpack decades of evolving science, from the low-fat era to today’s emphasis on food-based guidance. The team of experts will explore how different types of fats interact within the food matrix, impact cellular processes, how food processing can alter metabolic effects, and why context - not just composition - matters most. Attendees will gain insight into both cutting-edge research on saturated and unsaturated fats and future research needs to inform guidance, as well as learn how these findings are transforming public health perspectives and client counseling.

Using scientific evidence, case examples and real-world translation, participants will walk away prepared to clarify confusion, reframe client conversations and deliver food-first, culturally relevant guidance that reflects the latest science; equipping RDNs to lead the conversation on what “healthy fat” really means in 2026 and beyond.

Learning Objectives

After completing this activity, nutrition professionals will be better able to:

  1. Evaluate the evolution of scientific understanding of saturated and unsaturated fats and interpret how these shifts shape current public health recommendations and dietary guidance.
  2. Examine how the food matrix, processing methods, and fatty acid composition influence fat metabolism, cardiometabolic health, and health outcomes across dietary patterns, and contextualizing what these relationships mean for practical dietary choices.
  3. Integrate emerging evidence on dietary fats to develop balanced, food-based guidance that clarifies client confusion and promotes overall diet quality.
