Whether you’re shooting a video for social media or appearing on live TV, this session is designed to help RDs improve their on-camera performance skills to more effectively entertain and educate viewers. Learning Objectives

After attending this session, nutrition professionals should be able to:

  1. Identify and implement the steps required to pitch, plan, prepare, and prop a TV or video food segment.
  2. Understand how TV and video food and cooking demonstrations can build consumer confidence in the kitchen and trigger behavior change for healthier eating patterns.
  3. Implement key strategies for a winning on-camera performance by understanding that you, your food, and your message are the stars.

As an award-winning food journalist, speaker, author, nutrition communications consultant, television personality and registered dietitian nutritionist, Carolyn O’Neil, MS, RDN, believes “The More You Know, The More You Can Eat!” 

Carolyn writes food, nutrition, travel, and healthy lifestyle features for numerous consumer publications. Her blog is TheHappyHealthyKitchen.com, “Good for people and the planet.” She’s the author of Southern Living’s best-selling “The Slim Down South Cookbook” and co-author of “The Dish on Eating Healthy and Being Fabulous,” a winner at the World Food Media awards. 

Carolyn is the nutrition advisor for Delta Air Lines and leads a project to update special meals worldwide.

A seasoned television professional, Carolyn is a contributor to NBC Atlanta & Company, host of RDTV food segments, and can be seen as “The Lady of the Refrigerator” on Alton Brown’s Good Eats on Food Network. She’s led CNN’s coverage of food and nutrition for nearly 20 years. She’s earned three James Beard Foundation Awards and has been honored by the National Restaurant Association, the American Heart Association, the American Society for Nutrition, and the Academy of Nutrition and Dietetics for her pioneering work in nutrition communications.

Carolyn’s master’s degree in Nutrition is from Boston University and her undergraduate degree in Food and Nutrition is from Florida State University. Carolyn lives in Atlanta, Georgia.

Weiss is a sought-after speaker, spokesperson, TV personality, and cooking instructor. A pioneer in the world of podcasting, her first show, “Cooking with the Moms,” was launched in 2008 and ran for nearly 10 years and 300 episodes. “Liz’s Healthy Table” was launched in 2017 and is aimed at helping busy families eat a healthy, sustainable, and flavor-filled diet.
