Low-fat and fat-free dairy foods have long been recommended as a part of healthy eating patterns. Research continues to expand our understanding of dairy fat – shedding light on how health effects may depend more on the unique “food matrix” than on individual nutrients alone.

Join nutrition experts Hannah Holscher, PhD, RD, and Tara Schmidt, MEd, RDN, for an engaging discussion on the evolving science of the dairy food matrix and the cardio-protective benefits of dairy foods across all fat levels, and how flexibility in dairy food choices can help people build and enjoy healthy diets.

Learning Objectives

  1. Explain the concept of the food matrix and describe how the structural and compositional characteristics of dairy foods influence nutrient interactions and health effects.
  2. Summarize current scientific evidence on dairy fat consumption and its relationship to cardiometabolic health outcomes, including cardiovascular disease, type 2 diabetes, and weight management.
  3. Evaluate the role of whole dairy foods versus isolated nutrients in shaping health impacts, emphasizing the matrix effect.

Tara Schmidt is a registered dietitian and an instructor of nutrition at Mayo Clinic in Rochester, Minnesota. As the lead dietitian for the Mayo Clinic Diet, she provides guidance rooted in evidence-based principles, helping individuals develop sustainable and realistic strategies for long-term health. She also hosts Mayo Clinic On Nutrition, a podcast that dives into current nutrition research and practical weight management tips, and she lends her expertise as the Medical Editor of the Nutrition & Fitness channel for Mayo Clinic Press.

 

 

Dr. Hannah Holscher is a Professor of Nutrition at the University of Illinois Urbana-Champaign, where she also serves as Associate Director of the Personalized Nutrition Initiative and is a member of the Division of Nutritional Sciences, the Carl R. Woese Institute for Genomic Biology, and the National Center for Supercomputing Applications. Her research integrates clinical nutrition, microbiome science, and computational biology to investigate the impact of diet on human health. Dr. Holscher has authored more than 90 peer-reviewed publications and leads multidisciplinary research projects funded by government agencies, foundations, food commodity boards, and private industry. She has held leadership roles in the American Society for Nutrition and currently serves on the Board of Directors of the International Scientific Association for Probiotics and Prebiotics (ISAPP). She is also an Associate Editor for Nutrition Research and a member of the editorial board for The Journal of Nutrition.
